Method
- Remove your roast from the packaging and pat dry with paper towel.
- Rub the roast. oil and salt making sure the oil and salt penetrate the score lines
- Place the roast on a wire rack inside a baking tray and cook at 240 deg until the rind crackles/ up to 50 mins
- Turn oven down to 180 deg and cook for a further 40 mins
- Once cooked, let the roast rest for 10 mins before slicing
